||| Apple & Whisky Cake |||

 This is one of my favourite healthy-ish desserts. It is great that it contains no fats and I decided to make it sugar-free this time but you can make it as you prefer. There is nothing cakey about this recipe. The cake mixture is basically just there to bind the apples. This is all about apples, apples, apples! And the wonderful taste comes from the whisky which gives it an unusual depth. 
Ingredients:
  • 1 kg apples, sliced thinly
  • 200 gr plain flour
  • 2 eggs
  • 150 gr. sugar (or 75g Tagatesse)
  • 80 gr chopped almonds or walnuts
  • 100ml whisky
  • 1 1/2 tsp baking powder
  • Cinnamon
  • Extra sugar


In a large bowl beat the eggs and sugar until fluffy. Add the eggs and flour along with the baking powder and beat in.

Add in the whisky and chopped nuts. Mix well and add the chopped apples (leave enough apple slices to decorate the surface of the cake). Make sure the apples are well combined with the mixture. 

Put in a greased pan and cover with the remaining sliced apples making a nice pattern.


Sprinkle with cinnamon and some sugar. Bake in a pre-heated oven of 180 degrees for around 1 hour. 


Serving suggestion: Can be enjoyed hot out of the oven, cold from the fridge or warmed in a microwave . Personally I enjoy it cold :) But also would like to try it warm with a scoop of vanilla or cinnamon ice-cream!
