::: My Cosy Cottage Pie :::

When it's all rainy and cold as it is right now, one often craves hearty comforting food. Cottage Pie ticks all the  boxes for me! Far from being a fancy posh meal, this is definitely a great-value meal and a crowd-pleaser. 

Ingredients:
  • 500g beef mince
  • 1 onion, diced
  • 3 carrots, diced
  • 2 tbsps flour
  • 1/2 tsp cinnamon
  • 1 tbsp Italian seasoning
  • Worcestershire sauce
  • 350ml beef broth
  • 1 tbsp tomato paste
  • 4 potatoes
  • Butter
  • 1 cup milk

Place a large skillet over medium heat. Saute the beef for 1 minute and add the diced onion and carrot. Continue to saute until meat turns brown and onion begins to colour, about 5 minutes. Mix in flour, cinnamon an Italian seasoning.

In a small bowl, combine beef broth and tomato paste. Mix together, then add to beef mixture. Add a dash of Worcestershire sauce and season with salt and pepper to taste. 

Lower heat and simmer mixture for 15 minutes, stirring occasionally, until almost all of liquid has been absorbed. Spoon mixture into a large oven-proof dish.


For the potato topping, boil diced potatoes until tender. Mash potatoes until smooth, then add butter, followed by milk. Whip until fluffy. Add salt and pepper to taste. Spread potatoes over beef filling. Sprinkle with grated Cheddar cheese.


Bake in preheated oven 200 degrees C for 25 minutes, until top is nice and brown.


Suggestions: You can add some diced courgettes or other vegetables you like along with the carrots.
