Now living in Switzerland I couldn't not bake a traditional Swiss biscuit this festive season. This biscuit combines the flavours of decadent chocolate with the fragrant Wintery spice, cinnamon.Ingredients:
- 1 cup butter
- 2 cups sugar
- 2 eggs
- 85g dark chocolate, melted (good quality chocolate)
- 2 3/4 cups plain flour
- 1/3 cup cinnamon
In a large bowl, cream butter and sugar until light and fluffy.
Beat in eggs and the cooled melted chocolate.
Gradually add the flour and cinnamon to the creamed mixture and mix well.
Wrap dough in plastic wrap; refrigerate for 1 hour or until easy to handle.
On a lightly floured surface, roll out dough to 1.5cm thickness. Cut with a floured star-shaped cookie cutter. (Optional: I added snowflake sugar sprinkles on top)
