:: Grilled Chicken with Red Pepper Walnut Sauce ::

Check out this healthy Turkish grilled chicken meal which is healthy yet bursting with flavour and textures.

  • 1 large chicken breast
  • Packet of flat bread/Naan bread/pitta bread
For the rub:
  • 1 tsp dry mustard
  • 1 tsp garlic powder
  • 1 tsp salt 
  • 1/2 tsp ground cumin
  • 1/2 tsp ground black pepper
  • 3 tbsp olive oil
For the red pepper walnut sauce:
  • 1-1/2 roasted red bell peppers (from a jar)
  • 1/2 cup walnuts
  • 1/2 cup olive oil
  • 1/4 cup bread crumbs
  • 2 tbsp balsamic vinegar
  • 1/2 tsp ground cumin
  • salt & pepper to taste

Firstly combine all the rub ingredients in a bowl and mix them together. Cut the chicken breast in equal size portions and add to the rub. Mix with your hands so that the chicken are evenly coated with the rub. Refrigerate for 1 hour. 

In the meantime prepare the red pepper walnut sauce. Put all the ingredients in a food processor and pulse until it has the consistency of pesto.

After 1 hour take the chicken out of the fridge and insert the chicken pieces into wooden skewers. If you are going to cook them on a BBQ (even tastier result!) do not forget to soak the wooden skewers beforehand. I cooked the chicken skewers on a grill pan until they were evenly done and browned nicely.

Warm the flat bread/Naan bread on the grill/BBQ right before serving. Serve with Basmati rice or couscous and a nice green salad.
