:: Chicken Marsala :::



Chicken breast is my favourite kind of meat to cook. I find it so versatile and easy to prepare. This is a heartwarming chicken recipe which has a lovely rich sauce but without those extra calories cream adds.
Ingredients

  • 1/4 cup Plain flour for coating
  • 1/2 tsp Salt
  • 1/4 tsp Ground black pepper
  • 1/2 tsp Dried oregano
  • 4 Chicken breast halves, pounded
  • 1 tbsps Butter 
  • 2 tbsps Olive oil
  • 1 cup Mushrooms, sliced
  • 1/2 cup Marsala wine
  • 1/4 cup cooking sherry (use dry white wine if you don't have sherry)


In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken breasts in the flour mixture.



In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. 



Turn over chicken pieces, and add the sliced mushrooms. Pour in wine and sherry.

Cover skillet; simmer the chicken for 10 minutes, turning once, until no longer pink and juices run clear.
