||| Apple & Cinnamon Muffins |||




Nothing worse than a gloomy late Summer's day stuck in an office when alI you want to do is be at home baking something nice and fragrant. Although it is not Autumn yet today surely felt like it. And that brought about my apple and cinnamon craving! 
Ingredients
  • 2 cups plain flour 
  • 2 tsps baking powder
  • 1 cup sugar
  • 1 tsp cinnamon powder
  • 1 egg
  • 1 cup milk 
  • 4 tbsps of vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1 small apple, chopped
  • Some brown sugar

In a large bowl, sift together the flour, baking powder, sugar and cinnamon.

In a separate bowl, whisk together egg, milk, oil and vanilla extract.

Add the apples to the dry ingredients and pour in the liquid mixture.

Fold in gently with a large spoon until just combined. It is important not to over mix. Batter should be clumpy.

Line a muffin tray with muffin cases and spoon the mixture into a muffin tray.  Sprinkle some brown sugar on top of each muffin and pop in the oven.

Bake in a pre-heated oven for 20 mins on Gas Mark 5 / 190 degrees C.
