These muffins are really easy and fast to put together. A plain vanilla muffin with a lovely chocolate and caramel centre thanks to the hidden Caramel Egg inside. They are fun to bake with kids especially at Easter time.Ingredients
- 2 cups plain flour
- 2 tsps baking powder
- 1 cup sugar
- 1 egg
- 1 cup milk
- 4 tbsps of vegetable oil
- 1/2 teaspoon vanilla extract
- Mini Cadbury Caramel Eggs (One per cupcake)
In a separate bowl, whisk together egg, milk, oil and vanilla extract.
Add liquid mixture to dry ingredients, along with the white chocolate chips.
Fold in gently with a large spoon until just combined. It is important not to over mix. Batter should be clumpy.
Pour mixture into a muffin tray lined with muffin cases and place a mini Caramel Egg in the centre at the top of the muffin.
Bake in a pre-heated oven for 22mins on Gas Mark 5 / 190 degrees C.
Leave the muffins to cool (if u can resist!).
