A modern twist of the much loved Caprese Salad. A quick and easy summery appetiser which everyone will adore.Ingredients
- Box of cherry tomatoes
- Pack of Mozzarella balls
- Handful of fresh basil leaves
- Olive oil
- Chili oil (optional)
- Salt & Pepper
Drain the mozzarella balls and place in a bowl with some chopped basil leaves, salt and pepper, olive oil and 2 drops of chili oil. Make sure all the mozzarella balls are well coated. Cover with cling film and put in the fridge for a couple of hours so that the mozzarella will take in all the flavours.
Take a wooden skewer and tread a mozzarella ball, a cherry tomato, and a basil leaf until all ingredients are used up. You can make the skewers as long or short as you wish.
Arrange nicely on a platter, drizzle with olive oil and serve immediately.
