For all the chocolate, whisky & Guinness lovers out there! This is an amazing dark and dense chocolate cake with a lingering velvety taste of Guinness. The whiskey frosting is the perfect accompaniment to this cake making it an ideal St. Patrick's day dessert..or a sweet surprise to any grown-up party ;)
- 250ml Guinness
- 250g unsalted butter/margarine
- 75g cocoa powder
- 400g caster sugar
- 142ml sour cream
- 2 eggs
- 1 tbsp vanilla extract
- 300g plain flour
- 2 1/2teaspoons bicarbonate of soda
Start by pouring the Guinness into a large wide saucepan, add the butter in pieces and heat until the butter is melted.
- 3 cups icing sugar
- 1 cup heavy cream
- 2 -3 tbsps whisky
Whisk in the cocoa and sugar.
Beat the sour cream with the eggs and vanilla and then pour into the pan.
Finally whisk in the flour and bicarbonate of soda.
Pour the mixture into a greased tin and bake in a pre-heated oven gas mark 4/180°C for an hour or until a skewer inserted into the middle of the cake comes out clean.
Leave to cool on a cooling tray, and start preparing the icing.
Add in 1 tablespoon of the whisky at a time until the frosting is the constancy and flavor you want.
Try to resist eating the icing before you cover the cake. Terribly tasty stuff!
