||| White Chocolate & Cranberry Muffins |||

Finally I managed to find the perfect fool-proof muffin recipe. No more tough, dense muffins for me! These muffins are choc-a-bloc with chunks of white chocolate which compliments the lovely juicy cranberries really well. Give these muffins a try and don't be afraid to experiment with different chocolate and fruits.
  • 2 cups plain flour 
  • 2 tsps baking powder
  • 1 cup sugar
  • 1 egg
  • 1 cup milk 
  • 4 tbsps of vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1 cup dried cranberries
  • 150g good quality white chocolate, chopped

Start by soaking the dried cranberries in hot water  for about 30 mins so that they will become all plump and juicy.

In a large bowl, sift together the flour, baking powder and sugar.

In a separate bowl, whisk together egg, milk, oil and vanilla extract.

Drain the cranberries and pat them dry with some paper towels and add to the dry ingredients.

Add liquid mixture to dry ingredients, along with the white chocolate chips.

Fold in gently with a large spoon until just combined. It is important not to over mix. Batter should be clumpy.

Pour mixture into a muffin tray or fancy silicone molds and bake in a pre-heated oven for 22mins on Gas Mark 5 / 190 degrees C.

Leave the muffins to cool (if u can resist!).
