An easy peasy quick cupcake recipe that will make your friends 'green' with envy! Light airy cupcakes with a mild almond flavour that are great for St. Patrick's Day!Ingredients
- 100g sugar
- 100gr plain flour
- 1 tsp baking powder
- 2 eggs
- 4 tbsp sunflower oil
- 1 tsp green food colouring
- Few drops almond essence
Preheat oven to 180 degrees / Gas Mark 4.
In a large bowl beat the sugar and eggs until mixture becomes pale in colour.
Alternatively beat in the sifted flour and baking powder with the oil.
Add the green food colouring and almond essence and mix well.
Spoon batter into 12 cupcake cases and bake for around 12 minutes.
Let the cupcakes cool before decorating as desired.
