::: Ginger & Lemon Chicken :::

If you think there is no such thing as healthy comfort food then you're in for a surprise. Check out this zingy juicy chicken bursting with not only antioxidants but also wonderful deep flavours. A recipe that will definitly tingle your taste buds.

  • 1 small piece of fresh ginger
  • 1 clove garlic
  • 1 onion
  • Zest & juice of half a lemon
  • 2 boneless chicken breasts
  • 4 tbsp flour
  • 1/2 tsp salt
  • 1 tsp paprika
  • 1/2 tsp fresh ground pepper
  • 50cl sparking white wine
  • 4 tbsp olive oil

Peel the garlic and onion and chop finely.

Then peel the ginger and cut into thin strips and put in a small bowl along with the zest of half a lemon.

Cut the chicken breast into 3cm cubes.

Place the flour, salt, pepper and paprika in a large plastic bag and add the chicken cubes.

Close the bag well and shake until all the chicken pieces are well coated.

Remove the chicken from the bag and pat the chicken to remove access flour.

Heat the olive oil in a frying pan. Seal the chicken pieces on each side for 10 minutes until golden.

Add the onion, garlic and half of the ginger and lemon zest, and fry for 5 minutes.

Add the wine and juice of half a lemon. Turn down the heat and stir gently. 

Cover and leave to simmer for 30 minutes, stirring from time to time.

If you notice that the sauce has evaporated considerably, add some more wine. Taste and adjust seasoning accordingly.

Sprinkle the rest of the ginger and lemon zest on the chicken just before serving. Serve with rice and a crisp green salad.

Wine suggestion: Serve with a nice chilled bottle of Reisling.
