::: Salmon & Rucola Salad in Phyllo Baskets :::



A lovely way to start your meal and tingle your taste buds. It looks complicated and poshy but it is really very easy to put together. So, leave an impression on your guests at your next dinner party!

Ingredients
  • 2 packets smoked salmon
  • 1 packet phyllo/filo pastry
  • 100g butter, melted
  • Dill to garnish
Herbed cream cheese:
  • 1 package cream cheese
  • 1/2 cup heavy cream
  • 1 tbsp lemon juice
  • 1/2 tsp mixed herbs
  • Bunch of dill, chopped
Rucola Salad:
  • 1 packet rucola/rocket leaves
  • Olive oil
  • White wine vinegar
  • Salt & Pepper

Start by preparing the phyllo baskets. These can be prepared in advance and stored in an airtight container.
Lightly coat small oven-proof or pyrex bowls with melted butter (cooking spray or olive oil can also be used).
Working quickly, lightly coat four sheets of phyllo with melted butter or olive oil and stack together.Cut into squares as desired. Place the squares into the bowls, pressing down gently on the bottom and sides.
Bake until crisp and golden, for about 7 to 10 minutes in a pre-heated oven (be careful not to burn them). Let cool in the bowls before removing very gently.


You can now move on to prepare the herbed cream cheese. In a bowl put the cream cheese along with the cream, mixed herbs, chopped dill, lemon juice and salt & pepper and mix well until incorporated.
Taste and arrange seasoning and lemon juice accordingly. Cover and refrigerate until ready to use.

For the rocket salad mix some olive oil, white wine vinegar and salt & pepper and coat the rocket leaves until each leaf if dressed. Taste and adjust the dressing accordingly.

Now take the phyllo baskets and place a small handful of rucola salad inside.
Top the salad with a layer of smoked salmon. Twist and coil the salmon so that it will sit pretty on top of the salad.

Take out the herbed cream cheese from the fridge and spoon it into a piping bag with a florette nozzle attached. Pipe a florette of cream on top of the salmon and garnish with some dill. Serve immediately.

SERVES 6

Serving suggestion: Prepare these just before your guests arrive. The phyllo baskets will go soggy if you prepare them too early. You can have everything prepared ahead of time i.e. phyllo baskets, rucola salad and the herbed cream cheese so that you can put it together in no time.
