Tzatziki is a Greek and Turkish meze or appetizer. Tzatziki is made of strained yoghurt mixed with cucumbers, garlic, salt, usually olive oil, pepper sometimes dill, lemon juice and parsley, and sometimes mint added. Tzatziki is always served cold. While in Greece and Turkey the dish is usually served as an accompaniment, in other places tzatziki is often served with bread as part of the first course of a meal.
- 1 drained yogurt
- 1 small cucumber or half large cucumber
- 3 garlic cloves
- 1 tsp. dried mixed herbs
- Some chopped fresh parsley & fresh mint
- Pinch salt & pepper
In a food processor puree the cucumber & drain off any access liquid. Add the garlic & all the herbs. Add the salt & pepper & mix in the yogurt. Voila! Tzatziki ready!
Serving suggestion: This can be served as a dip with crackers, water biscuits or carrot sticks, or served with fish as a healthier alternative than tartar sauce. :) Keep refrigerated.
