- 200gr self-raising flour
- 200gr margarine / butter
- 200gr sugar
- 3 eggs
- grated rind of 1 large lemon + its juice
Pre-heat oven to 180ºC, 350ºF, Gas Mark 4.
Cream margarine and sugar until light and fluffy.
Add the grated lemon rind and juice.
Beat in eggs, one at a time, adding a little flour with each. Gently fold in remaining flour.
Fill 12 cupcake cases 2/3s full and pop into the oven for around 20 minutes.
Serving suggestions: You an prepare a lemon syrup by mixing lemon juice and icing sugar and drizzling some on each cupcake. Mmmm.. enjoy! ;)
