Got some lemons and you don’t know what to do with them? This recipe is the answer. It is so tasty and easy that you will make it over and over.
This sponge is so unique because it turns into the loveliest pudding after a few minutes. On top it is a light sponge cake while a layer of lovely lemon curd forms at the bottom making it the perfect dessert.
- 55g butter or margarine
- 115g sugar
- Grated rind & juice of 1 large lemon
- 2 large eggs, separated
- 55g self-raising flour
- 285ml milk
Cream butter, sugar and lemon rind.
Add egg yolks and flour and beat in.
Add the milk and lemon juice and mix well.
Whisk the egg whites in a separate bowl until stiff and add to the rest of the mixture. Fold in lightly. It is important not to over-mix.
Divide the mixture into buttered microwave-proof bowls if you want individual portions or in a Pyrex.
Pop into the microwave on Max setting for around 6 minutes until the top has set and is springy to the touch.
Put under the grill for 2 minutes until lightly golden if desired.
