||| Chocolate & Mint Cupcakes |||


  • 200gr plain flour
  • 50gr cocoa powder
  • 2 tsps. baking powder
  • pinch salt
  • 90gr unsalted butter or margarine
  • 100gr sugar
  • 2 eggs
  • 160ml single cream
  • Few drops mint extract
  • 50gr mini chocolate chips
  • Decoration: Aero Mint Bubbles, sprinkles etc..

Mint Butter Cream Frosting:

  • 140gr unsalted butter or margarine
  • 150gr icing sugar
  • 1 tbsp. milk
  • Few drops mint extract
  • Few drops green food colouring

Preheat oven to 180 degrees / Gas Mark 4.

Mix flour, cocoa, baking powder and salt together and set aside.

Cream butter and sugar until fluffy and add eggs one at a time.

Alternatively beat in flour mixture and cream and add few drops of mint extract and mix well.

Spoon batter into 12 cupcakes cases and sprinkle each with chocolate chips.

Bake for around 20 mins or until a skewer inserted into the centre comes out clean.

To make the frosting: Cream butter and icing sugar until fluffy and add milk, mint extract and food colouring and mix well.

Spread over cooled cupcakes and decorate to your liking.
