||| Strawberry Cheesecake Ice-cream |||

It's Strawberry season..so lets make the best of these red juicy fragrant fruit while they last! This ice-cream inspired from a cheesecake will surely be a hit with all of you this Summer!
Ingredients:

  • 300g fresh strawberries
  • 150g cream cheese
  • 3/4 cup sugar
  • 1 cup milk
  • 1 tbsp lemon juice
  • 1/2 cup fresh cream
  • Digestive biscuits (optional)

In a food processor puree the strawberries.

Add the sugar, milk, lemon juice and fresh cream and pulse 5 times until well blended. (Should smell divine!)

Add the cream cheese cut into blocks to the mixture and blend until well incorporated.

If you have an ice-cream maker pour ice-cream mixture into machine and follow instructions.

Or else if you don't have an ice-cream maker just pour ice-cream mixture into a plastic container with a lid and pop into the freezer.

After around 2 hours take it out of the freezer and with a spoon mix the half-frozen ice-cream around the edges so that it will all become the same consistency. Put back in the freezer and repeat after 1 hour.

Take out of freezer at east 15 mins before serving.

Place a digestive biscuit at the bottom of your ice-cream bowl and place two scoops of ice-cream on top. Garnish to your liking and enjoy ;)

||| Orange n' Chocolate Spiral Cookies |||


If you love the orange and chocolate combination then these are the cookies for you!


Ingredients:
  • 170g butter / margarine
  • 350g plain flour
  • 300g caster sugar
  • 1 egg, beaten
  • 25g dark chocolate, melted
  • grated rind of 1 orange


In a large bowl, cream butter and sugar until fluffy.

Add the beaten egg gradually to the mixture and beat well.



Sift flour into the creamed mixture and mix until a dough forms.

Transfer half of the dough into another bowl and beat in the cooled melted chocolate.


Stir the grated orange rind into the other half of plain dough.


On a lightly floured surface, roll out the 2 peices of dough to form rectangles of the same size.

Lay orange dough on top of the chocolate dough and roll up tightly into a sausage shape preferably using a sheet of baking paper to guide you.


Put dough into the freezer for 45mins until it is firm enough to slice.

Cut roll into slices and place them on non-stick baking trays.



Bake in a preheated oven at 190 degrees Celsius/Gas mark 5 for about 12 mins or until lightly golden.


Transfer the cookies to a wire rack and leave to cool completely before serving.

::: Mexican Beef Burritos :::

Ingredients:

  • 1 packet large tortilla wraps
  • 500gr minced beef
  • 1 cup red kidney beans, cooked
  • 120ml water
  • 1 packet Taco Seasoning
  • 120gr cheddar/emmental cheese, grated 
  • 1 jar Salsa Dip mild


Cook minced beef until brown and add the red kidney beans.


Add the packet of Taco Seasoning to the beef and add the water.and simmer for 10 minutes until the mixture thickens.
If you see that the mixture is still watery add 1 tbsp of flour and the beef mixture will thicken in a few seconds.
Take the tortilla wraps one by one and divide the beef mixture between the 6 wraps.

Close the wraps well and place in a dish.

Cover with the grated cheese and pop in the oven for few minutes until the cheese melts and starts to become golden.


Serve burritos on a bed of lettuce and some salsa on top. Mmm..enjoy!


Serving suggestion: If you want to go a bit further and make a Mexican night out of this meal (like I did!) serve your guests/bf some nacho tortilla chips topped with salsa and a bottle of Corona beer while they wait. ;)

||| Oatmeal Chocolate Chip Cookies |||


These fiber-packed cookies are ideal for breakfast or for a quick healthy snack through-out the day.

Ingredients:

  • 1 cup (110g) walnuts and hazelnuts, toasted and chopped 
  • 3/4 cup (170g) unsalted butter/margarine, room temperature
  • 1 cup (210g)  brown sugar
  • 1 large egg
  • 1 teaspoon vanilla essence
  • 3/4 cup (105g) plain  flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3 cups (260g) Jumbo oats
  • 1 cup dark chocolate chips

In a bowl beat the butter and sugar until creamy.  

Add the egg and vanilla and beat to combine. 

In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon. 

Add the flour mixture to the creamed mixture and beat until incorporated. 

Stir in the nuts, oats, and chocolate chips


Put tablespoon full of mixture on a lined baking sheet and space the cookies about 5 cm apart on the baking sheet. 


Bake the cookies for about 12 -15 minutes in a preheated oven at 350 degrees until golden brown around the edges but still soft and a little wet in the centers. 


Remove from oven and let the cookies cool a few minutes on the baking sheet before transferring them to a wire rack to cool.

::: Sushi :::


Sushi (すし、寿司, 鮨, 鮓, 寿斗, 寿し, 壽司) is a food of Japanese origin consisting of cooked vinegared rice combined with other ingredients.

Ingredients:

  • 2 1/2 cups Sushi rice
  • 2 1/2 cups water
  • 4 tbsp. Japanese rice vinegar
  • 3 tbsp. fine/caster sugar
  • 2 tsp. salt
  • 6 sheets nori (seaweed sheets)
  • Soy sauce
  • Wasabi paste
  • Roasted sesame seeds

Filling:

  • Avocado, cut in thick strips
  • Smoked salmon pieces
  • Any filling you desire.

Place rice in a colander and rinse and drain well. Place the rice and cold water in a pan and bring to boil. Cover the pan, turn the heat down to very low and cook for 15 mins without lifting the lid. Turn off the heat and allow to stand for 10 mins, still covered.

Meanwhile mix together the vinegar, sugar and salt in a small bowl until sugar dissolves.

Spread the hot rice on a large baking sheet and drizzle with the sushi vinegar until it is all coated. Switch on a ceiling fan (if available) to cool the rice quicker.

Place a nori sheet on your rolling mat and spread the sushi rice evenly over the nori by pressing with your wet finger tips. Leave a 2cm border at the far edge of the nori.

Smear a small amount of wasabi in a line across the middle of the rice. Arrange your chosen fillings (in my case smoked salmon and avocado) on top of the wasabi in a horizontal line.

Roll up the sushi tightly with the sushi mat to form a cylinder.

Alternatively if you would like the rice on the outside, put a layer of cling film on the layer of rice and flip over so that the seaweed is on top and fill with your chosen fillings as described above.



Roll up into a cylinder with the help of the cling film and sprinkle with sesame seeds and/or paprika.





Cut each sushi roll into 2 1/2 cm rounds using a sharp wet knife. (It is important to moisten the knife after each cut).


Serving suggestion: Serve Sushi with a small bowl of soy sauce for dipping. 




||| Oh so sweet! Strawberry Cupcakes |||



Spring is in the air! What better way to celebrate this time of year is there than making yourself these lovely treats to enjoy with your loved ones! They are pink, soft, sweet & gorgeous to look at.. can food get any better??

Ingredients:

  • 200gr sugar
  • 125gr butter / margarine
  • 1/4 sachet strawberry flavoured jelly powder
  • 2 eggs
  • 185gr plain flour
  • 1 1/2 tsps. baking powder
  • 125ml milk
  • 65gr strawberries, chopped into tiny pieces
  • Few drops vanilla essence
  • Few drops red food colouring

In a large bowl, cream together the butter, sugar and strawberry jelly powder until fluffy.

Beat in eggs one at a time, mixing well after each one.

Add the red food colouring and vanilla with the milk.

Combine flour and baking powder, and stir into the batter alternatly with the milk.



Fold in the strawberry pieces in the batter.

Pour the batter into the cupcake cases and bake for 15mins in a pre-heated oven on gas mark 4.



Serving suggestion: These delicious cupcakes go well with cream cheese frosting or whipped whipping cream for a lighter option. And fresh strawberries on top..mmm!!
